If you are a fitness and health enthusiast then you definitely must have heard about the keto diet. But have you ever wondered how does keto work? The ketogenic “keto” diet is a very low carb high fat diet which involves drastically reducing carbohydrate intake and replacing it with fat. This reduction in carbs puts your body into a metabolic state called ketosis. When this happens, your body becomes incredibly efficient at burning fat for energy. 

Keto is most popular for its weight loss benefits. It may also help with blood sugar control in people with type 2 diabetes. For centuries, this diet has been used as a treatment for children with epilepsy whose seizures weren’t responding to medication. Researchers also believe that it may have positive benefits for other neurological conditions, like autism, Alzheimer’s, Parkinson’s, multiple sclerosis, traumatic brain injuries, and brain tumours. With all the above mentioned benefits and many more, Keto is gaining a lot of popularity.

Keto instant pot recipes

Flank steak taco salads

  • Add oil in the bottom of a pot. When the pot is warm, add onions and sauté them with a little salt and pepper for about 5 minutes and then add in the garlic.
  • Cut flank steak into smaller hunks of meat and season them well with salt and pepper all over.
  • Add the steak into the pot and sear on each side until browned for about 2-3 minutes per side.
  • Add in the salsa verde, broth, chilli powder, cumin, and tomato paste. Toss using tongs to combine evenly.
  • Seal the pot and cook for about 45 minutes.
  • When time is complete, release the pressure quickly.
  • When pressure is released, using tongs transfer the meat onto a cutting board and using two forks, shred the meat. Discard all but about 1/4 cup of the excess liquid in the pot. Place the meat back into the pot and toss in the liquid until it is all soaked up.
  • Serve taco salad style, in tacos, on nachos, stuffed in peppers, or however you please.

Keto Chicken Enchilada Bowl

  • Add coconut oil in a pot and melt it over medium heat. Once hot, sear chicken thighs until lightly brown.
  • Pour in enchilada sauce and water. Add onion and green chillies. Reduce heat to a simmer and cover. 
  • Cook chicken for 17-25 minutes or until chicken is tender and fully cooked.
  • Carefully remove the chicken and place onto a cutting board. Chop or shred chicken then add it back into the pot. Let the chicken simmer uncovered for an additional 10 minutes to absorb flavour and allow the sauce to reduce a little.
  • To serve, top it with avocado, cheese, jalapeno, sour cream, tomato, and any other desired toppings. 

Broccoli Cheese Soup

  • Add butter in the bottom of a pot. Once melted, add minced garlic and cook for about 30 seconds.
  • Add chicken or vegetable broth and sauté for 1 minute.
  • Add broccoli florets to the broth. Seal the pot and cook for about 10 minutes.
  • Quick-release pressure after 10 minutes and remove lid. Add shredded cheddar cheese, shredded Monterey Jack cheese, mustard, paprika, and pepper, and stir until cheese begins to melt.
  • Pour in heavy cream and continue to stir until all ingredients are well-incorporated.
  • Add salt to your taste.
  • Ladle soup into serving bowls and garnish with shredded cheddar before serving.

Fall-Off-The-Bone Chicken

  • In a small bowl, whisk together brown sugar, chilli powder, paprika, and thyme. Pat chicken dry with paper towels then season generously with salt and pepper. Rub the brown sugar mixture all over chicken.
  • Heat a pot and add oil and chicken, breast side down. Sear it for about 3 to 4 minutes. Use very large tongs to flip chicken then pour broth into the bottom of the pot. 
  • Seal the pot and pressure cook the chicken for about 25 minutes.
  • After 25 minutes, release the pressure from the pot and remove lid. Take out chicken and let rest for 10 minutes before slicing.
  • Garnish with parsley and serve warm.
