Here is a super easy recipe for classic banana bread that stays moist for days. Its batter takes about 10 minutes to throw together and nothing can beat its creamy cheese frosting. 

Ingredients

Banana Nut Bread ingredients:

  • 2 cups all-purpose flour
  • 1½ teaspoons baking soda
  • Pinch of salt
  • 1 cup granulated all brown sugar
  • ½ cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 4 medium ripe bananas (mashed (about 1⅓ cups or 303 grams))
  • 1 cup coarsely chopped walnuts

Cream Cheese Frosting ingredients:

  • 4 ounces (112g) of softened cream cheese
  • 1/4 cup (60g) of softened unsalted butter
  • 1 cup (120g) of confectioners’ sugar
  • 1/2 teaspoon of pure vanilla extract
  • pinch of salt

How to Mash Bananas?

  1. Use your electric mixer to mash bananas.
  2. Slice the spotty bananas into large pieces and place in a bowl.
  3. Begin beating on low and then gradually increase to medium-high speed as the bananas break down into mashed bananas.
  4. Transfer the bananas to another bowl and use the mixing bowl for the banana bread ingredients. (No need to clean it– some mashed banana remnants are fine.)

How to make Banana Nut Bread?

  1. Preheat the oven to 350 degrees F. Grease two 8×4-inch loaf pans and set aside.
  2. In a medium bowl, whisk together the flour, baking soda and salt; set aside. 
  3. In a large bowl, whisk together the sugar, oil, eggs, and vanilla extract. Add the bananas and stir gently to combine. 
  4. Add the flour mixture and stir until completely blended. Using a rubber spatula, fold in the walnuts.
  5. Divide the mixture into the two loaf pans. Bake for 35 to 45 minutes, or until a thin knife inserted into the centre comes out clean. 
  6. If the loaves begin to get too dark before they are done in the middle, cover with foil. Allow to cool in the pans for 10 minutes then turn out onto a wire rack to cool completely. 

How to make Cream Cheese Frostings?

This banana bread tastes fantastic with cream cheese frosting on top. To make it use the following steps:

  1. Beat cream cheese and butter together on medium speed until smooth. 
  2. Beat in sugar, vanilla extract, and a pinch of salt until combined.
  3. Spread on cooled loaf.

How to Freeze Banana Bread?

You can freeze banana bread using following instructions:

  1. Cool baked banana bread completely.
  2. Tightly wrap the loaf or slices (individually or grouped) in 2-3 layers of plastic wrap or aluminium foil.
  3. Place wrapped banana bread in a large freezer-friendly storage bag or reusable container.
  4. Date the bag and freeze for up to 3-4 months. 
  5. Thaw wrapped or unwrapped in the refrigerator or at room temperature. All methods work like a charm!

Some recipe notes

  • Be sure to use the ripest bananas you can find. It enriches the flavour and ensures that the bread retains moisture.
  • Make nut substitutions if you’d like. Walnuts are a classic, but pretty much any other nut will work – try pecans, peanuts, anything! You can also omit the nuts if you’d prefer, as well.
  • Add chocolate chips if you’re feeling it. You can swap them in for the nuts, or do half and half.
  • Use softened butter for a soft texture and irresistible butter flavour.
  • Use all brown sugar in the banana bread recipe as it yields soft and moist banana bread. It also adds wonderful flavour.
