Ingredients
- 2 large bone-in chicken breasts – Bone-in, skin-on chicken breasts are plenty flavourful on their own.
- ¼ cup of extra virgin olive oil – Keeps the chicken moist and juicy during baking and crisps the skin
- 1 teaspoon lemon juice – Adds wonderful brightness and citrus flavour
- Seasoning: 1 teaspoon minced garlic, ¼ teaspoon onion powder, ¼ teaspoon garlic powder, ¼ teaspoon dried oregano, ¼ teaspoon dried rosemary and ¼ teaspoon basil.
- ½ teaspoon salt
- ¼ teaspoon black pepper,
Directions
- Arrange the chicken in a parchment lined baking dish and pat dry.
- Prepare a mixture of minced garlic, dried oregano, dried rosemary, basil, onion powder and garlic powder. Add olive oil to the mixture.
- Rub the chicken breasts with the prepared mixture.
- Squeeze lemon juice over the top and arrange lemon wedges around the chicken. Top each breast with salt and pepper.
- Refrigerate the dish for at least 45 minutes.
- Preheat the oven to 375 degrees F (190 degrees C).
- Bake the chicken in a preheated oven for at least 35 to 45 minutes until chicken meat is no longer pink at the bone and the juices run clear.
- Remove the baked chicken from the oven and allow it to sit for 3-5 minutes before being served.
